My friend, Sherry, had us a bunch of women make these for the men at church for fathers day. They were a hit! And so rich! You'll love these. :)
(Oh, and they take a little while to make as you let the layers cool so these aren't for those in a hurry.)
Mint Brownies
Brownies:
4 oz. unsweetened baking chocolate, chopped
1 C butter
4 eggs
2 cups sugar
1 tsp vanilla
1 ¼ C flour
½ tsp baking powder
Mint Frosting Layer:
2 C powdered sugar
4 T butter, softened
1 ½ tsp peppermint extract
1-2 Tbs. milk
Green food coloring
Chocolate Glaze:
6 oz. (about 1 cup) semi-sweet chocolate chips
6 tablespoons butter
Preheat oven to 350 degrees. Line a 9x13 inch pan with foil making sure the foil extends over the edges by about an inch. Spray with non-stick cooking spray and set aside.
Melt the unsweetened chocolate and butter in the microwave at 30 second intervals until melted. Stir between each interval. Set aside.
Beat together eggs, sugar and vanilla and then add the melted chocolate. Sift together flour and baking powder and then add to the chocolate mixture, mixing until just combined. Pour batter into prepared pan and bake for 20-30 minutes, or until a tester comes out clean. Set aside to cool.
Combine ingredients for mint frosting and then spread over cooled brownies. Chill in the refrigerator while preparing the chocolate glaze.
Melt chocolate chips and butter in the microwave at 30 second intervals until melted. Stir between each interval. Cool slightly and then carefully pour/spread over the top of the mint layer. Return to the fridge to cool. Once chocolate has hardened use edges of foil to remove the brownies from the pan. Trim edges and the cut into squares.
I make these most every year right around Christmas and then again around St Patrick's Day. They are always such a grand hit. Love Love.
