This recipe is so easy and oh so good! I found it in the February edition of Southern Living.
LEMON BUTTER COOKIES
1 cup butter
1tsp. lemon zest
1 cup powdered sugar
2 cup all purpose flour
1/4 tsp. salt
Preheat over to 325 degrees. Beat butter and zest together, gradually add sugar, beating well.
Combine flour and salt. Gradually add to butter mixture, beating until blended. Shape dough into a disc.
Roll dough to 1/8 inch thickness on a lightly floured surface. Cut with heart shaped cutter. Little hands are great for this step.
Bake for 12-14 minutes. Cool.
Decorate as desired. I used a butter cream icing which is equal parts butter and powdered sugar and whatever color you desire. Also for writing I used a icing gel pen.
