This is a easy and slightly healthy roll out cookie recipe. Great for making any sort of holiday cookies with little ones. The best part is there is no egg required so go ahead and eat all the dough you want!
3 cups flour (all purpose, whole wheat pastry flour or a combination of the two)
1 teaspoon baking powder
1/2 cup grape seed oil
2/3 maple syrup
2 teaspoons vanilla
1 teaspoon sea salt
Preheat oven to 350. Combine the flour and baking powder in a large bowl. In a separate bowl, stir together the oil, syrup, vanilla and salt. Add w
et ingredients to dry. Stir to form smooth dough.
Roll dough out to 1/2" thickness on floured work
surface. Use cookie cutters to cut into desired shapes. Bake for 15 minutes or until lightly browned. Cool completely.
Frosting
2 cups confectioners sugar
6-8 Tablespoons milk or soy milk
4 Tablespoons light corn syrup
food coloring to reach desired colors
In a bowl, stir together sugar and milk, until smooth. Beat in corn syrup until icing is smooth and glossy. Add food coloring.
Dip cookies in icing and allow time to dry.
