Peanut Butter Filled Chocolate Cookies


 


If you like peanut butter and chocolate, especially together, this is the cookie for you. This is another re-post that was posted in 2008 and again in 2010. It seems that as I keep making them, they get to be more and more or a wanted item which makes me want to update the photos and approach to this super easy recipe.
 
This recipe comes from my wonderful aunt Sally and I honestly don't know how she continues to cook and bake the way she does. It is like magic. She can just take something out of nothing and make it delicious. So, with this recipe which is actually called Magic Middles, I give her a big shout out to say thank you for your creation!  

 
Magic Middles

Pre-heat oven @ 375 degrees

Dough Ingredients and Directions:

Chocolate
Beat Together-
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter
1/4 cup peanut butter

Add 1 teaspoon of Vanilla and 1 egg (Beaten Well).

Stir in 1 1/2 cups of All purpose flour 1/2 cup of baking cocoa, and 2/3 tsp of baking soda. (I use 1/2 tsp.)

Peanut butter center:

In separate bowl mix-
3/4 cup of peanut butter
3/4 cup of powdered sugar

Forming the Cookies:
 
 
 
 



 
 
 
Roll in sugar and press down with hand or bottom of glass
 

  or Press down with bottom of glass dipped in sugar.


Bake in pre-heated oven @ 375 degrees for 7-9 minutes. Remove to cool.



 
They will still feel soft.

Whole Wheat Peanut Butter Chocolate Chip Cookies


This is simple recipe of my aunt's that I have changed to make it more hearty and nutritious. The original recipe still produces a delicious cookie, I just love how my changes not only made them really good, but healthier too. I have made these 6 different times to make sure I got it right where I wanted them. They are super soft and store well in a cookie jar or closed container. They also do really well in the freezer and I can now say they are a great cookie to mail to others. This is such a simple recipe that you can change and omit ingredients as you please and still make a great cookie.


 
Whole Wheat Peanut Butter Cookies
(Originated from "Grandma's Chocolate Chip Cookies" recipe from Doris R.)

Recipe written out with original recipe and the changes I have made:


Ingredients:
  • ¾ c. brown sugar  organic brown sugar
  • ¾ c. sugar organic evaporated cane juice (organic sugar)
  • 1 c. shortening   butter (softened)
  • 2 eggs  (room temperature)  
  • 1 tsp. vanilla  
  • 1/2 cup of Adams or equivalent peanut butter (which contains one ingredient, peanuts) 
  • 2 ¾ c. flour whole wheat flour
  • 1 tsp. salt kosher salt
  • 1 tsp. baking soda
  • ½ c. nuts (optional)  1/4 cup ground Flax seeds (optional)
  • 3 T. hot water  IMPORTANT INGREDIENT!
  • 1 pkg. chocolate chips  1-2 cups mini semi-sweet chocolate chips


Directions:
Cream together sugars, shortening butter, peanut butter, vanilla, and eggs. Add rest of ingredients. Mix together flour, salt, baking soda and ground flax seed (optional) and add into wet mixture. Add hot water and Mix. Stir in chocolate chips. Bake on ungreased cookie sheet for 10 minutes. Roll into small balls or use cookie scoop and bake on a lightly greased cookie sheet for 8-10 minutes at 375 degrees. Place onto a cooling rack immediately.


The end result will usually make a mound like cookie. You can flatten the dough a little bit, but too much with not let them be as soft as they are as a mound. I let the cookies take their own shape.


Even though they might look like they not done, you will be surprised that they are after 8 minutes or so. Always, let them cool on a cooling rack or another surface that is not still hot and they will continue to form and seal in a wonderful cookie texture.

Puppy Chow

Challenge: make a treat with a food staple item

Rachael's Gooey Chex Mix from the last post looks so good, doesn't it? It reminded me of my kids' absolute FAVORITE treat: Puppy Chow (also known as Muddy Buddies). Which are well known, but are good enough for a repeat. Sorry about no picture, but we had birthday cake last night so I get no sweets for a week!

RECIPE:
9 cup Chex
1 cup chocolate chips
1/2 cup peanut butter
1/4 cup butter
1/4 teaspoon vanilla
1 1/2 cup powdered sugar

Put cereal in large bowl. Melt chocolate chips, peanut butter, and butter. Remove from heat and stir in vanilla.Pour over Chex cereal, put into a large plastic bag with powdered sugar and shake well to coat. (Got a huge Tupperware bowl? You can shake the powdered sugar on in that, too.)

Spread mixture evenly on wax paper and allow to cool. Hungry little bellies can't wait? Put it in the freezer for 20 minutes.

**Ok, wanna make it ten times better? Mix in mini pretzels!

**Want it fifty times better? Skip the Chex altogether and make it pure pretzels. So, so, so good.

Chocolate, Peanut Butter and Ritz

Are you in the mood for a snack? How about something sweet, salty and chocolaty all at once? This is the snack for you!

My good friend introduced me to this little number the other day. I'm surprised they've lasted in my fridge as long as they have. I've been showing some major self-restraint, and my kids don't know they're there! The best part about these delectable delights, aside from the taste, is that they're super easy to make. I don't have a name for them. Feel free to submit suggestions!

What you need:
Melted Dipping Chocolate.
Smooth Peanut Butter 
Ritz Crackers
A cookie sheet lined with wax paper


What you do:
(Are you sure you're ready for this?) Spread a generous amount of peanut butter on a cracker. Top with another cracker. Dip the whole thing in the chocolate, making sure it is entirely coated. Place it on the wax paper. Repeat with remaining ingredients. Let cool in fridge until chocolate is hard. Store in airtight container or Ziplock bag.

Chocolate Peanut Butter Cookie Bars

These cookie bars turned out to be a success when I didn't even plan on making them. As the story goes, my husband requested some peanut butter cookies with chocolate chips while I was in the middle of making all of our Christmas treats for our neighbors. I asked "Why don't you make some while I make these cookie bars". His willful reply was "But, you make them so much better than I do". Ha! This is quickly translated into the words "I don't really want to make them when you can do it for me."As much as I wanted to come back and say that, I decided to make these, which is a cross between the two. Well, as my luck had it, he liked them better than my peanut butter cookies with chocolate chips. I honestly don't know the source of this recipe as it was hand written from one of my mother's church cookbooks.  

Recipe for Chocolate Peanut Butter Cookie Bars:
Step 1
1/2 cup Butter (softened) or Butter flavored Crisco with 3 tsp water
1/2 cup packed Brown Sugar
1/2 cup white sugar

Cream these 3 ingredients together

Step 2
1 egg
1 teaspoon of baking soda
1/2 teaspoon of vanilla
1/3 cup of peanut butter
1/4 teaspoon of salt

Blend into creamed mixture

Step 3
1 cup of flour
1 cup of oats

Stir into mixture

Depending on how thick or thin you want your cookie bars. You can bake them in a cake pan or double the recipe and spread out on a large cookie sheet. Bake in a pre-heated oven set @ 350 degrees for 20-25 minutes or until done. Turn off oven and spread a bunch of milk chocolate chips all over top of cookie bars and put bake into the oven for a few minutes until chips are soft enough to spread all over. Spread them all over and then drizzle Peanut butter topping:

Peanut Butter Topping
1/2 cup powdered sugar
1/4 cup Peanut Butter
2-4 Tablesoons of milk

* I put the topping mixture in a ziplock sack, snip the end and drizzle a bunch of lines.
Then, I took my butter knife and drew lines with it going the oppostie way which pulls the mixture into a pretty design (as shown above).

I made mine in a small cake pan so these bars look thick (kind of like fudge).
