Wow, this month has already flown by, I've been pretty busy in and out of the kitchen. today I wanted to share how I did my harvesting and preserving this year. Look for more posts on how-to canning, dehydrating, and freezing specific produce.
When we moved to Oregon in June, we were still able to start a garden. Since we were a little late for planting we began with starter plants (as shown below).
Some of our plants produced faster than others and it keeps growing strong.
Corn
Romaine Lettuce
Peppers (Green, jalapeno, yellow, and red)
Tomatillos

Peas
Others include carrots, squash, zucchini, green beans, watermelon, tomatoes, and herbs.
About the same time that my late garden was coming along, I went to visit my parents garden in Idaho. Their lettuce looked perfect!

Just commenting again on this post. I am excited to start my garden this year. Sandpoint is very wet and the soil is very clay so I am going to add some more dirt/soil/fertilizer to my garden and then build up my rows (I don't have time or tools for a raised bed). I am going to also plant one end of the garden higher so that the water will drain towards the lawn as last year my garden was ... sort of drowning. Anyway, hopefully I can fix some of the issues I had last year!
