Honey Caramel Sauce


Perfect for fall apples!! I love this stuff... and it's SOOO easy!

1/2 c honey
1 stick butter
3/4 c brown sugar
1 can sweetened condensed milk

In a medium sized saucepan, mix honey, butter and brown sugar together over medium high heat. Bring mixture to a rolling boil and boil 2 minutes, stirring constantly. Add sweetened condensed milk and mix well. All done! Let cool at least a little (this is almost worth burning your tongue over). Eat with apple slices, pretzels, over ice cream, (or off the spoon... I may or may not have done that). :) Oh the possibilities! It would be great over sliced peaches with a little whipped cream... hmmm. I think I'll go try that right now. Happy fall everyone!

Five Minute Caramel Corn

Did you know October is national Caramel month and Popcorn Poppin' month? Why not combine the two and make this easy treat?

Five Minute Caramel Corn

1/2 cup unpopped popcorn
1 stick butter
1 cup brown sugar
1/2 bag marshmallows

Air-pop popcorn into large bowl and set aside. Melt butter in microwave. Stir in brown sugar. Add marshmallows to sugar/ butter mix and microwave one minute. Stir. Microwave another 30 seconds. Stir. Microwave another 30 seconds if needed. Pour over popcorn and stir until evenly coated.

Halloween Caramel Apples


Whoever you are, caramel apples are a must around this time of year! They are so easy to make and fun to decorate and 3 easy steps.


Granny Smith Apples are generally perferred.


Melt your caramel pieces and spread all over.  You can decorate from here or....


Pour white or regular chocolate all over cooled caramel apple and roll into candy or crushed cookies.

The Big Easter Apple

Easter is here and there are so many different things to do with this holiday. I saw on the calendar that it was National Caramel Day this month and the first thing I thought of was making homemade caramels. Then, I thought about something fun for kids and came up with this idea. Honestly, I don't make caramel apples at anytime other than the fall. However, every time I pass a Rocky Mountain Chocolate Factory, and see the racks full of decorated apples, it confirmed my desire to make some of my own this Easter. These were easy to make and made it fun for my whole family to participate in. I recommend trying it for yourself.

Melt caramels with a couple of teaspoons of milk. Coat each apple to your liking. Coat the second layer with melted white chocolate or regular melted chocolate.

Immediately after you coat with chocolate, roll in any topping you like. For this one, I rolled it in Easter M&M's.

This one I rolled it in crushed up Golden Oreos.
* Just remember that the white chocolate might not hold the topping right away so, you might have to press the toppings on with your hands also.

Carrot Cake Fit for a Wedding

This carrot cake dates back to when my mother was married in November of 1972 and then was used again for my sister's wedding in 1998. Since my mother's wedding, she has continued to make these for huge events and holidays. This cake is so moist, it melts in your mouth. I find it hard to just have one piece, no wonder this recipe makes so much. Enjoy your Carrot Cake Holiday.

Carrot Cake Recipe:
2 cups of Sugar
2 1/2 cups of Flour
1 teaspoon of Salt
2 teaspoons of Baking Soda
2 teaspoons of Cinnamon
1 cup of Oil
3 Eggs
1 1/2 teaspoon of Vanilla
2 cups of ground Carrots
1 3/4 cup of Crushed Pineapple (Drained)
1 3/4 cup of Plain Applesauce
1 cup of Coconut
1/2 cup of Walnuts (chopped)
Blend all ingredients except stir in carrots, pineapple, applesauce, coconuts and nuts.
This makes a lot of cake so, you can put it all in a greased shallow cookie sheet or 2 different greased cake pans. Bake at 350 for 20-25 minutes.


While it is cooking, you can make your caramel sauce.
In a double broiler combine:
Melted 2 cubes of butter (8 oz)
1 can of Evaporated Milk
2 cups of Brown Sugar
2 cups of White Sugar

Cook until sugar is dissolved and well mixed.


Pour caramel sauce on a piece of cake just before serving. Do each individually.
Don't pour all the sauce on the cake (will go soggy).
