Fish Tacos

Makes 6 tacos

3 tilapia fillets
dash of garlic
dash lemon pepper
olive oil
avocado
onion
tomato
cilantro
lime
Monterrey jack cheese
corn tortillas
dash of salt

* I use frozen Tilapia, cover my frying pan with oil, cook Tilapia on low-med heat, cover with lid. Meanwhile, I chop all my veggies, dash with salt and garlic powder. After Tilapia is cooked dash with lemon pepper.
* Spray olive oil Pam cooking spray on a griddle, cook both sides of tortillas, and melt the cheese on one side.
* Combine all together and add some fresh squeezed lime.

The tacos should taste fresh and lite.

Crab Burgers (Open faced)

This recipe takes me back to when I went to an all girl's party up at a cabin when I was younger. I remember having such a great time, but what I really remembered was the crab burgers my friend's mother made us with a side of potato chips. In fact, I can still see her taking them out of the broiler. Since that time in the cabin, I took this recipe with me to my mother who continued to make them for me and my sisters. After a time, when I got married and had children, I wasn't sure if my memory of the recipe was quite right. Now, that I have discovered Facebook, I was able to get into contact with my long lost friend Marianne and requested the recipe for this delicious memory so to speak. So, thank you Marianne, and to everyone who enjoys a good crab burger, this ones for you!

Marianne Stone's Original Crab Burger Recipe-
Ingredients:
8oz. Dungenous Crab 
1 can Tomato Soup undiluted
1/2 finely chopped Walla Walla Sweet onion
2 heaping Teaspoons of Best Foods Mayo 
8 oz. sharp Cheddar Cheese grated


Directions:
Mix together, spread on half of a hamburger bun, broil on low in the oven until bubbly.


My version of Crab Burgers-

Makes 6 sandwiches
1 (6-ounce) can of lump crab meat, drain well
1/3 cup ketchup
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/2 cup cheddar cheese, shredded
1/2 cup onion (green or sweet)

Mix all ingredients together. Spoon onto an open hamburger bun. Sprinkle some cheese on top. Turn on oven to Broil. Place open face buns onto baking sheet. Broil with oven door partly open and cook until cheese is melted and buns have browned around the edges.
Serve open face with chips, fruit or vegetable.
Additional Notes:
The best kind of crab is fresh cooked from the legs.
You can use canned pink or white crab meat as a substitute for the lump crab meat also.
Use English muffins as a substitute for hamburger buns.

Yummy Trout and Hashbrowns

This is my first time being more than 3 hours from my family. I have missed some of the wonderful traditions my family has every year... golfing over the fourth of July at Star Valley, Wyoming, hunting over Labor Day weekend, bar-b-cues, and parties. This year, the trip I missed the very most was fishing at Henry's Lake over Memorial Day weekend. After going to the grocery store about a thousand times waiting ever so impatiently for the chance to buy trout, it finally arrived. The next day... a family treat, trout and hashbrowns. I would love to share this easy but tasty recipe.



Ingredients:
         trout
         saltines or club crackers (crushed into chunks)
         egg (whipped)
         hashbrowns
         butter
         salt
         pepper
         lemon juice

Hashbrowns:
         Place 3 tbsp butter in frying pan. Put desired amount of hashbowns in pan. Season with salt and pepper. Cook over medium heat stirring often until softened.

Fish:
         Dip filleted fish in egg. Season fish with salt and pepper.. Coat with broken crackers. In a separate pan from hashbrowns, fry over medium heat about 6 minutes each side or until fish becomes pale pink. With the fish, be sure to keep the pan buttered to prevent burning of the crackers.

Add a dash of lemon juice to the fish. Dish up and enjoy!!

Chunky Tuna Dip


If you like Tuna Salad, you will really enjoy this combination. I know, everyone can pretty much put together a tuna mix for sandiwiches and stuff. This combination not only has those basic tuna fish sandwich ingredients, it takes a little twist that I like to call Chunky Tuna dip.

The key is to cut eveything in large chunks (well, as chunky as you want them anyway).
This is what I like to throw in my dip:
Canned Tuna
Celery
Onions (any kind)
A splash of Pickle Juice
(I don't add pickles to this dip usually)
Dill Weed
Salt and Pepper (liberally)

It's easy and tastes like you put a little something extra in there but, like I said, it is a basic tuna fish mix with a twist. I like to serve it with large crackers and it makes a perfect snack for those days when a basic tuna fish sandwich doesn't do it for you.

Seafood Month- Catch, Eat and Dine



Well, it is that time, seafood cook off's everywhere. I wanted to share some great ways to get out there and enjoy your seafood month at the Oregon Coast.



That particular Cod (top of post) was caught by my sister in Alaska. One of the great benefits about fishing and hunting in Alaska, is that you can take it all back to the mainland with you. Although, she resides in Alaska, my sister brought a lot of her (and her husband's) catch to the Oregon Coast for all of us to enjoy. Deep Sea fishing can be enjoyed at many coasts and is great for that adventurous fish lover out there.


If you are not up to deep sea fishing though, crabbing in an excellent way to get out to sea (except you are crabbing in a harbor). It is a great way to get your pick and eat it to. Our pick for best seafood blog, click on the next link (image above from http://timeinthekitchen.com/)

From Top left: Rent a crabbing boat that will come with bait, gear, and facility to cook them. After that just bait the net, cast the net, wait, pull it up (quickly), sort, and throw back. Depending on where you are, there are regulations as to the type, size, and sex of the crab.


These Red Rock Crab were up for grabs and it had no regulations on them.

You may catch some other sea creatures in your crabbing net.


We choose Netart's Bay Crabbing and Clamming Company this year because of the location, prices, and  the fact that they included everything.

They even including the cooking.
The only thing we had to do was clean them.


In addition to a fine day at bay, we headed over to Mo's Restaurant in Cannon Beach to have a bowl of their famous clam chowder.

Tilapia and Salad Spritz with Tomato and Green Bean Salad


Instead of Bagels and Lox, I thought I would share my Tilapia and Salad Spritz recipe. It is yet another recipe that I like to throw together. If you have a hard time with fishy fish, tilapia might be something you'd like to try. It doesn't have nearly as much fishy taste as most (kind of like cod). As far as the Spritz goes, I like to put lemon juice, balsamic vinegar, and olive oil in spray bottles so that the flavor with be evenly distributed without over doing it. I also like to use I can't believe it's Not Butter Spray to add a little butter flavor without the calories and it is cheaper that Butter Extract. With that, this fresh, fast, delicious recipe is waiting for you.

For Tilapia

Mix together, in small cup, equal parts: Dill weed, paprika, dried garlic/garlic powder, lemon pepper, parsley and half part salt.

Lay out fresh or defrosted fillets and rub or sprinkle mix over fillets.

Grill fillets with a little olive oil/butter spray and spray occasionally to get a golden color. Also spray balsamic vinegar and/or lemon juice as desired.

For Salad
Cook whole green beans (find them in the produce section or buy Birds Eye Steamed Bag packs.
Slice tomatoes and lay over cooked green beans (beans will get cool on their own). Spray with butter and balsamic vinegar all over tomatoes and beans. Sprinkle with Parmesan cheese.

For Rice:
When you add rice to the water to cook, also add a little butter, chicken bullion, shredded cilantro or parsley, and lemon juice. Cook like normal, Tastes great!
